Carrot- Apricot Casserole Recipe

Ingredients

Dried apricots; 11 oz

Apricot nectar; 12 oz

Bellgian carrots, drained; 2

Firmly packed brown sugar

Butter
¼
c
Slivered almonds

Directions

  1. Soak apricots in nectar overnight.
  2. Put 1 jar carrots into a two quart casserole.
  3. Top with half the apricots, half the apricot nectar, and 1/4 C brown sugar.
  4. Dot with 2 T butter, repeat layers.
  5. Sprinkle with almonds.
  6. Bake, covered at 350 degrees for 30 minutes, or until bubbly.
