Directions

  1. Heat oven to 375°F.
  2. Lightly butter four 8 ounce souffle dishes; dust with 1/2 tb sugar.
  3. Combine apricots and the water in a small saucepan.
  4. Cook covered, stirring occasionally, over low heat for 15 minutes.
  5. Transfer to a food processor.
  6. Add 2 tb sugar and the lemon juice and process to a puree.
  7. Transfer to a large bowl.
  8. Beat the egg whites and salt in a mixer bowl until frothy.
  9. Gradually beat in 1-1/2 tb sugar and the almond extract; beat until stiff.
  10. Add egg whites to puree; gently fold with a spatula.
  11. Spoon into prepared dishes and smooth tops.
  12. Bake until puffed and browned, about 20 minutes.
