Quick Orzo Casserole Recipe

Ingredients

Orzo

Butter

Fine chopped clove garlic

Dry onion soup mix

Water or leftover veal
Stock

Shiitake/white mushrooms
Sliced

Parsley chopped

Directions

  1. Brown the orzo and garlic in butter in a heavy casserole over medium heat, stirring constantly, 2 to 2 1/2 minutes until golden brown.
  2. Sprinkle on the onion soup mix and mix in.
  3. Add water or stock and stir well.
  4. Cover and simmer for 10 minutes.
  5. Add sliced mushrooms; do not stir.
  6. Cover and simmer for another 10 minutes.
  7. Sprinkle on and stir in parsley.
  8. Cover and let stand for 5-10 minutes until all liquid is absorbed into the pasta.
